Refreshing Watermelon Juice and a Mini-Miracle
So this week my cell phone stopped charging. Annoying because that is where I take most of my pictures (so I can text them to my mom or mother-in-law). I made this recipe and tried to take a picture but my phone indicated battery low so I gave up and shut it off. Then, while I was finishing my juice it spontaneously turned on. It did the take the picture but when I hit send again I saw battery low. Crud. But then I tried again from the phone's home screen and it worked! Obviously, this mini-miracle means I was destined to share this recipe.

Mango Berry Greek Yogurt Smoothie
If you've been following my recent posts you may have noticed that this week I bought two mangoes for purposes of making mango bread but only ended up using one. Also, as noted in my last post in which my husband prepared dinner and dessert, we also had blackberries in my fridge. So I decided to try making a smoothie, which wound up being delicious and filling.

Refreshing Watermelon Salad by Mr. Delish
So today I had an incredible day. At the outset, I went to my cousin-in-law's bridal shower, which was really nice (and even won the centerpiece pictured below because my b-day was the closest to the wedding day). In addition, earlier in the week, knowing that I would be tired, my husband wrote in our menu that he was making dinner. I know he can make pasta and we had lobster ravioli in the freezer (and a good vodka sauce in the fridge), but what I wasn't expecting was a gourmet meal...

Mango Bread with Almonds and Craisins
Pretty much everyone who knows me knows that I love mangoes. And pumpkin. Plus Cheese and Chocolate. That's what I'm about. Bread I like too. So naturally when I saw this recipe posted on Eva Bakes (which she originally found on Dash of Sugar and Spice; I knew I had to try it. Not quite sure whether to consider it breakfast or dessert; I think it works for both, though maybe you'd add more sugar for dessert since the bread is lightly sweet. It is super-moist and yummy.
Healthy Balsamic Fig Pork Chops and Homemade Mac
I had been dying to try this recipe which is adapted from Cooking Light Fresh Food Fast: 250 Incredibly Flavorful 5-Ingredient 15-Minute Recipes cookbook is titled Pork Tenderloin with Balsamic Onion-Fig Relish (I used pork chops instead since I had them on hand and thought this sauce would probably go better with pork chops). When I told my husband that I had been thinking of making the pork chop, he suggested mac and cheese. I decided to make my own for the first time ever. I also prepared a nice fresh salad to go with this meal.

Chocolate Chip Ice Cream Sandwiches
In honor of National Chocolate Chip Cookie Day, I decided to make chocolate chip cookie ice cream sandwiches filled with chocolate chip ice cream. An homage to the chocolate chips if you will.

Spicy Vodka Sauce over Shrimp and Whole Wheat Spaghetti
So Mr. Delish came up with this idea the other day since we had extra cherry tomatoes in the apartment and I was thinking of making shrimp. I'd never heard of shrimp in vodka sauce before but this recipe was perfect. The man is a genius. I love the spicy taste of this sauce. Also, this dish was quick and easy to prepare (once I shelled and deveined my shrimp). I paired it with steamed broccoli. My husband told me that this was the best dinner I've ever made. As for me, it's hard for me to choose a favorite dinner/recipe. That said, this one is definitely a contender.

Spinach Linguini Aglio e Olio with Cherry Tomatoes
So a while ago I saw a packet of spices called "spaghettata" at a deli. Basically, those spices included red pepper, parsley, and garlic (if memory serves) and were for making spaghetti aglio e olio (with garlic and oil). I quickly realized that I could prepare the meal myself. I love this meal because it's fast to make and something a bit different from other sauces. I have read that sometimes people also eat something similar as a side dish.

Quinoa with Mango and Coconut Milk
I recently saw this recipe featured on How Sweet It Is and decided that I had to make my own breakfast quinoa. I went to the store to pick up coconut milk and realized I had forgotten a couple of the other ingredients. I did know fruit was involved so I bought mango which is my favorite fruit. Even though it's not a fruit people normally add to cereal etc I liked it with the quinoa since it was really ripe and sweet enough that I didn't have to add any sugar to this meal. I would definitely try with berries or banana as well. Almonds work with this pretty well.
